*Beef Curry with Pumpkin



INGREDIENTS

  • 1 cup beef sliced thin
  • 2 cups coconut milk or light cream
  • 1 cup pumpkin peeled and diced
  • 2 packages or 2 tablespoons red curry paste
  • 2 chilies cut lengthwise
  • 10 sweet basil leaves or chili leaves
  • 2 tablespoons nampla (fish sauce)
  • 2 tablespoons vegetable oil

    METHOD

    In a sauce pan heat oil over low heat Stir-fry red curry paste for 3 minutes.   Add sliced beef and nampla.   Turn over a few times. Add coconut milk and stir until well mixed.   Cover and let simmer for 20 minutes. Add pumpkin, cooking over medium heat until pumpkin is tender.   Add chilies and sweet basil leaves.   Remove from heat.
