*GLOSSARY

BEAN CURD (Taw Hou) A soft white cake made from Soybeans that is similar in texture to cheese. Dried bean curd usually comes in twists or flat sheets. Fresh, dried and canned varieties can be purchased in all Oriental food shops.

BROWN BEAN SAUCE A sauce with the consistency of ketchup, made of crushed soy beans, chilies, garlic and salt. It is available in bottles or 8 ounce cans.

BLACK MUSHROOM Dried whole mushrooms with very dark skin are stronger in flavor than the white mushrooms. It gives a distinctive taste to the dishes in which it is used. Before cooking they must be soaked in warm water until soft Available in any Oriental store.

BAMBOO SHOOTS Bamboo sprouts packed in water .

BA-MEE Egg noodles.

COCONUT MILK Scrape the meat from a fresh coconut. A blender is very useful for grating coconut. Add 2 cups hot water to each cup coconut meat Let stand for half an hour, then squeeze through cheesecloth or strainer to extract the milk. For making Thai dessert, may use “Baker’s Angel Flake” coconut available in all super markets. Add ˝ cup hot water to each can (3 ˝ ounce) of coconut meat. Let stand for half an hour. Squeeze and strain.
