*Pork Curry Country Style
INGREDIENTS
1 cup pork sliced into 2 inch strips
3 tablespoons red curry paste
1 cup fresh mushrooms cut in halves
½ cup chopped cabbage
½ cup green beans cut into 1½ inch segments
½ cup red chili cut into strips
2 tablespoons nampla (fish sauce)
1 teaspoon sugar
1 tablespoon Krachai optional
10 mint leaves
½ cup vegetable oil

METHOD
Soak cut vegetables in cold water for 15 minutes.
In a large frying pan heat the oil, stir in red curry paste.
Add pork and nampla and stir-fry for 5 minutes.
Lift vegetables from water and quickly add to pan.
Stir-fry about 3 minutes.
Sprinkle with sugar and toss lightly Spoon to a serving bowl.
Garnish with mint leaves.
Serve hot.
