*Tom Yum Goong (Sour Shrimp Soup)



INGREDIENTS

  • 10 medium shrimp
  • 1 cup button mushrooms (canned)
  • 1 stalk lemon grass or 2 pieces lemon peel
  • 2 magrood leaves (optional)
  • ½ teaspoon salt
  • ½ teaspoon MSG.
  • 2 tablespoons nampla (fish sauce)
  • 2 tablespoons lemon or lime juice
  • ½ teaspoon chili powder
  • 8 sprigs coriander
  • 1 quart water
  •  

     

    METHOD

    Wash, peel and cut shrimp.   Bring the water to boil, add lemon grass (lemon peel), and Magrood leaves.   Drop in shrimp and simmer gently for 3 minutes.   Add mushrooms, salt and MSG.   Remove from heat, season with nampla, lemon juice, and chili powder Spoon into individual serving dishes.   Garnish with sprigs of coriander.   Serve hot.
