*Tuna Fish Salad
The Thai loves to drink and eat like Americans and others.
The following dishes serve as appetizers or can be snacks or small lunches in themselves.
INGREDIENTS
1 can chunk tuna fish ( 8 ozs.)
1 cup ground pork
2 tablespoons finely chopped ginger root
2 tablespoons chopped red onion
½ teaspoon garlic powder
1 teaspoon salt
2 tablespoons lime juice
½ tablespoon lime peel
2 tablespoons ground roasted coconut
½ cup peanuts
1 teaspoon chili powder
lettuce and coriander

METHOD
Cook the ground pork in frying pan without oil for 3 minutes or until well cooked.
Place in bowl.
Drain the turn fish and add to the cooked pork; mix well.
Add garlic powder, salt, lime juice.
Blend together.
Add chopped ginger, chopped red onion, chopped lime peel.
Decorate the plate with lettuce leaves.
Spoon tuna mixture on individual lettuce leaves.
Top with roasted coconut, peanuts, coriander leaves and chili powder.
Serve as a finger food..
